Low GI Diet Coleslaw

I got this recipe out of The Low GI Diet Revolution book that I have been reading and trying to follow (sometimes failing) throughout this fall.

This was a really light and refreshing recipe for coleslaw, hubby liked it too! I got a large head of cabbage in my CSA box so it was perfect timing to make this along with burgers on the grill during those balmy nights last month.


3 cups cabbage, finely shredded
1 carrot, grated (I didn't have this on hand)
1/2 red onion, finely chopped
1/4 cup Italian parsley, chopped
1 T. canola mayonnaise
2 T. lemon juice

Combine the cabbage, carrot, onion and parsley in a large bowl. Add the mayo and lemon juice; toss to combine. Enjoy!
